I love making traditional Neapolita-style pizzas in my Ooni Fyra. Margherita and marinara pizzas are staples at my house for Friday night pizza night. But, sometimes I get bored of the classics and I want to do a little bit of experimentation. That’s why I started making some delicious, albeit non-traditional, pizzas out of leftovers. That’s right! Here are four pizza topping combinations that you can make from leftovers in your Ooni pizza oven:

  1. Butter Chicken Pizza
  2. Pulled Pork and BBQ Sauce Pizza
  3. Buffalo Chicken Pizza (with Rotisserie Chicken)
  4. Chicken Shawarma Pizza with Yogurt Sauce

All of these pizza toppings ideas came from day-old homemade dinners, or from take-out meals that I had sitting in the fridge just waiting to be forgotten. Instead of letting your leftovers go to waste, why not turn them into a delicious, stone-baked pizza on your Ooni?

Of course, you could make all of these pizzas with actual leftovers. That especially makes sense if you’ve got a take-out meal from a restaurant sitting in your fridge. But, you could also make all of these toppings from scratch for the sole purpose of making a specialty pizza. It’s up to you!

Either way, I hope you give some of these Ooni pizza topping combinations a try. Let’s start with the first, and probably my favorite pizza topping on this list – butter chicken pizza.

4 Ooni Pizza Topping Combinations Made from Leftovers

1. Butter Chicken Pizza

When I first got into making homemade pizzas, butter chicken pizza was the first big “experimental pizza” that I remember making. I loved butter chicken (the buttery and spicy chicken curry dish popular in many Indian restaurants in the US). I also loved pizza, so I thought, why not mix the two together.

If you’re into Indian fusion, this is the pizza to make. Tandoori chicken and a buttery curry sauce, all held together with a layer of mozzarella cheese – this really is one great pizza.

To make this pizza, top your dough with a relatively thin layer of butter chicken sauce (separate the sauce from the chicken, if you’re using leftovers). On top of the sauce, add a layer of low-moisture, shredded mozzarella cheese. Then, add some pieces of chicken from the butter chicken dish. Bake this in your Ooni pizza oven on high heat (above 900°F) for 1 1/2 to 2 minutes. If the temperature is lower in your oven, it will probably take between 3-4 minutes to cook fully.

2. Pulled Pork and BBQ Sauce Pizza

I remember enjoying slices of barbecue chicken pizza at a pizza buffet chain when I was younger. While that buffet pizza was definitely low-quality, there’s no arguing that barbecue sauce goes great on pizza – and pork goes great with barbecue sauce even better than chicken, in my opinion!

So, if you’ve got some leftover pulled pork in the fridge, and some store-bough barbecue sauce, you’re not far off from a great pizza. Throw in a little shredded mozzarella cheese to the mix and you’re ready to go. Three ingredients. Easy.

For this pizza, top your pizza dough with a thin layer of barbecue sauce. (This can be store-bought or homemade.) Add a layer of low-moisture, shredded mozzarella cheese, and then put some pieces of pulled pork on top. Bake this in your Ooni pizza oven on high heat (above 900°F) for 1 1/2 to 2 minutes. If the temperature is lower in your oven, it will probably take between 3-4 minutes to cook fully.

3. Buffalo Chicken Pizza with Rotisserie Chicken

This is another one of those weird pizza toppings that I remember having as a kid, Buffalo chicken pizza. I remember local Midwest pizza places ocassionally selling this type of pizza, with spicy Buffalo sauce, mozzarella cheese, and roast chicken. These are not exactly pizza toppings that Italians would be proud of, but don’t tell me it doesn’t work!

Plus, if you’ve got some Buffalo sauce and Rotisserie chicken in the fridge, this is a great way to make pizza out of leftovers!

For this pizza, top your dough with a thin layer of Buffalo sauce. (If you don’t have any pre-made Buffalo sauce, mix Franks Red Hot Sauce with melted butter at a 50/50 ratio. That’s the original sauce right there.) Then add a sprinkle of low-moisture, shredded mozzarella cheese. Top everything off with pieces of cooked Rotisserie chicken. Bake this in your Ooni pizza oven on high heat (above 900°F) for 1 1/2 to 2 minutes, or until fully cooked.

4. Chicken Shawarma Pizza with Yogurt Sauce

Chicken shawarma pizza with yogurt sauce is another surprisingly great pizza topping combination. I have to admit that I came across this idea on Reddit, and I’m glad that I did. This is an amazing pizza to make if you want to make the most out of your leftovers. Plus, you can make it with or without cheese and it is still amazing!

For this pizza, top your pizza dough with a thin layer of tomato sauce. (This can be crushed San Marzano tomatoes, or just any classic pizza sauce that you want to use.) To the sauce, add 8-10 pieces of leftover chicken shawarma. Bake this in your Ooni pizza oven on high heat (above 900°F) for 1 1/2 to 2 minutes, or until fully cooked. Then, when the pizza is done cooking, add some fresh, diced tomatoes and a drizzle of Lebanese-style yogurt sauce.

To make a quick yogurt sauce, mix 1 cup of plain Greek yogurt with the following ingredients:

1 Tbsp. lemon juice
1 Tbsp. finely diced cucumber
– 1 tsp. dried mint
– 1 tsp. garlic powder
– 1 pinch of salt
– 1 pinch of pepper

Adjust the seasonings until the sauce tastes good to you!

As you can see, it’s easy to throw together a delicious pizza from leftovers. Whether you make these pizzas from actual leftovers or you make the toppings from scratch, I hope you give some of them a try! My favorite is still the butter chicken pizza, but you can decide your favorite on your own.
